Mini Cookie Sandwiches
2 egg whites
1/2 cup sugar
1/4 teaspoon cream of tartar
1/2 teaspoon vanilla extract

In a small saucepan or double broiler, combine egg whites, sugar and cream of tartar. Heat over medium-low, whisking consistently, until sugar has dissolved and egg whites are frothy. It should have a somewhat shiny appearance.
Immediately transfer to a bowl and beat on high adding vanilla. Continue to beat until stiff peaks form. The texture should be thick and sticky.
Using an icing tip, apply cream to mini cookie, then place a second cookie on top.
Don't forget they're the perfect size for snack bags. You can pre-make them and pop them in the freezer!
