UK Gingerbread Men Sandwich Cookies

Ingredients
Cheese Filling
8 oz Cream Cheese (block at room temperature)
1/2 cup unsalted butter, at room temperature, cut into cubes
3 cups powdered sugar
2 tsp Vanilla Extract
Pinch of Salt
Method
Beat softened butter and cream cheese together on medium speed until smooth and well combined, about 2 minutes.
Reduce speed to low, then add salt, vanilla extract, and powdered sugar.
Once incorporated, increase to high speed and whip for 1–2 minutes until light and fluffy.
Lastly, pipe cheese frosting onto the flat side of one cookie. Gently press a second cookie on top, to form a sandwich.
