Lemon Posset

The easiest “fancy” dessert you’ll ever make!

This lemon posset is silky, bright, and perfectly lemony… but the real move is dipping a Walker's Shortbreadus Snack Pack Round right into it. The buttery crunch with the creamy lemon is so good.

Ingredients

2 cups heavy cream

2/3 cup sugar

5 tbsp fresh lemon juice

Method

Add heavy cream and sugar to a saucepan and bring to a boil while stirring.

Lower to a high simmer and stir every 30 seconds for 5 minutes.

Remove from heat and cool for 5 minutes.

Stir in lemon juice and let cool 15 minutes.

Pour into teacups or ramekins and refrigerate 2–4 hours (or overnight).

Serve chilled with Walker’s Shortbread Rounds and dip to enjoy.
