Walker's Mini Egg Shortbread Nest Bites

These charming Easter bites are as joyful to make as they are to eat! Made with Walker’s Mini Shortbread Eggs, each layer brings a perfect balance of buttery crunch and creamy sweetness. These treats are topped with Mini Shortbread Eggs and colorful mini candy eggs for the ultimate Easter-inspired look. Easy to assemble and irresistibly cute, they’re perfect for spring gatherings, dessert tables, or a fun baking activity with loved ones.

Ingredients

Cookie Base

1 cup crushed Walkers Mini Shortbread Eggs

Filling Layer

1 1/2 tablespoons melted butter

1 cup milk chocolate melted

Frosting Nest

1/2 cup unsalted butter (room temp)

1 cup powdered sugar

1–2 tbsp heavy cream or milk

½ tsp vanilla

green food coloring

Topping

12 whole Walkers Mini Shortbread Eggs

mini candy eggs (yellow, blue, white)

Method

Make the cookie cup: crush 1 cup Walkers cookies into fine crumbs.

Mix with 1 1/2 tablespoon melted butter until it looks like wet sand.

Press 1-2 tablespoons of the mixture into each mini muffin cavity.

Push crumbs to the sides.

Bake at 325°F / 160°C for 8 minutes. Cool 15 minutes.

Spoon 1 tsp melted chocolate into each cup.

Spread thinly & let set for 10 minutes

Make the frosting: add butter, sugar, vanilla, cream and Add 1 drop green food coloring until you get the soft pastel mint green.

Pipe the nest: use a large star tip (Wilton 1M) and pipe a spiral nest on top of each cup.

Decorate: Press 1 Walkers Mini Egg cookie upright and 2-3 candy eggs into the frosting.
