Christmas Pudding Shortbread Truffles

Celebrate the season with these no-bake Christmas Pudding Shortbread Truffles. Made with an all-butter shortbread crumble, dark chocolate and a hint of brandy, they bring all the richness of a classic Christmas pudding into one bite-sized treat. Finished with white fondant and holly decorations, they’re easy to make and a charming addition to any festive gathering.

Ingredients

3½ oz dark chocolate melted

¼ cup heavy cream

3 tbsp plus 1 tsp Brandy

¼ tsp Salt

1.8 oz white fondant

Holly decoration

Red cake decorating pearls

Method

Add the Walker's Shortbread Fingers, melted dark chocolate, heavy cream, brandy and salt to a food processor and blend until smooth.

Roll a tablespoon of the mixture into balls.

Roll a little of the white fondant icing into balls and flatten them, pinching their sides to make an irregular shape for the Christmas pudding tops.

Press the holly decorations on top, cover and refrigerate for 10 minutes to firm up.
