Walker’s Stem Ginger Apple Crumble

Fall calls for a recipe that tastes like the season. We elevated a classic apple crumble recipe using our Stem Ginger Shortbread.

Ingredients

Apple Filling

 

5 medium apples, peeled, cored and sliced

2 tablespoons brown sugar

1 tablespoon all-purpose flour

1 tablespoon lemon juice

1 teaspoon ground cinnamon

½ teaspoon vanilla extract

Pinch of salt

Stem Ginger Crumble

 

1 package Walker’s Stem Ginger Shortbread, coarsely crushed

½ cup old-fashioned oats

2 tablespoons brown sugar

4 tablespoons cold unsalted butter, cubed

Pinch of salt

For Serving

 

Vanilla ice cream

Method

  1. Preheat the oven to 375°F. Lightly butter an 8-inch baking dish.

  2. Add the sliced apples, brown sugar, flour, lemon juice, cinnamon, vanilla and salt to the dish. Toss until evenly coated.

  3. In a bowl, combine the crushed Walker’s Stem Ginger Shortbread, oats, flour, brown sugar and salt.

  4. Work the cold butter into the mixture with your fingertips until chunky crumbs form.

  5. Sprinkle the crumble evenly over the apples.

  6. Bake for 35–40 minutes, until the topping is golden and the apple filling is bubbling around the edges.

  7. Let it cool for 5–10 minutes, then serve warm with a scoop of vanilla ice cream.
