Walker’s Mini Cakes

Make a stackable sweet treat with your favorite cake recipe made mini (we used Carrot and Vanilla), buttercream frosting, and pure butter shortbread. They’re easy to make and fun to eat!

Ingredients

4” Cake Pans

Your favorite homemade or store bought cake recipe/mix

1.5 C buttercream frosting

1-2 packages Walkers Shortbread Rounds or Highlanders (1 pkg makes 6 mini-cakes)

Method

Preheat oven to 350°F (for the cakes)

Bake in pre-greased 4” cake pans for around 15 minutes or until cake tester comes out clean.

Allow cakes to cool. Slice each cake in thirds and set aside.

Take a Walker’s Shortbread Round or Highlander and spread on a layer of frosting.

Add one layer of Cake and frost.

Add another Walker’s Shortbread Round or Highlander and frost.

Add one layer of Cake and frost.

Garnish with a Shortbread and add any embellishments you’d like. We’ve added edible flowers.

Assemble additional shortbread & cakes similarly until everything is used.
