Veggie Hummus Stacks

Any pepper can be used, depending upon the heat level you prefer. Pictured are poblano and sweet red peppers. In partnership with The Daily Tea.


1/2 cup diced sweet peppers

1/2 cup diced hot peppers

2 tbsp olive oil

1 cucumber, sliced thinly

1 container hummus (any flavor)


Heat olive oil in pan, adding peppers and sauteing until soft.

Spread a a spoonful of hummus on the oat cracker, then add a slice of cucumber, topping with the sauteed peppers.
