Shortbread Cookie Peanut Bars

Ingredients
2-3 tbsp butter
1 cup of any gluten free brownie batter
1/2 cup peanut butter
1 cup chocolate chips
1/2 cup coconut flakes
Method
In a food processor, add the Gluten Free Shortbread Rounds and butter. Pulse until it is a fine sand-like texture.
Add Gluten Free Shortbread Rounds mixture to a lined loaf pan. Press to create smooth crust.
Top with 1 cup of any gluten free brownie batter. You can use a store bought mix or make your own from scratch.
Top with peanut butter.
Bake on 350 for 15-20 minutes or until brownie mixture is set.
Remove from oven and top with chocolate chips and coconut flakes.
Return to oven and bake for another 4-5 minutes until chocolate is melted.
Remove from oven and let cool before cutting.
