No-Bake Chocolate Chip Cheesecake Parfaits

These No-Bake Chocolate Chip Cheesecake Parfaits are so easy and yummy. It's like chocolate chip cookie dough meets all butter chocolate chip cookies in one delicious bite! It's a chocolate chip lover's dream and a yummy dessert to whip up ahead of time for your Easter buffet!
Ingredients
2 (8 oz.) packages cream cheese, room temperature
3 tablespoon heavy cream
1/3 cup sugar
1 tablespoon pure vanilla extract
1 cup chocolate chips (milk chocolate or semi-sweet)
Whipped cream for serving
Method
Add cream cheese, heavy cream and sugar to a mixing bowl and blend until creamy. Stir in vanilla and beat for a minute longer then, increase speed to medium-high and whip mixture until thick and creamy.
Reduce speed and stir in chocolate chips until combined.
Crush Mini Walker's Shortbread Chocolate Chip cookies.
Add a few tablespoons of crushed cookies to the bottom of individual dessert cups. Top with a few heaping tablespoons of cheesecake mixture. Repeat layers.
Refrigerate until ready to serve.
Before serving, top with whipped cream and sprinkle with additional crushed chocolate chip cookies if desired.
