Mini Margarita Cheesecakes
Cinco de Mayo just got sweeter! Dive into our Mini Margarita Cheesecakes, using our all-butter Shortbread Rounds.
Ingredients
Whipped Cream:
1 cup of whipping cream
1 Tbsp. of sugar
Cream Cheese Filling:
1 8 oz. package of cream cheese
1 cup of sugar
1 Tbsp. of lime juice
Zest of one lime.
Base:
Method
Whip 1 cup of whipping cream with 1 Tbsp. of sugar until you have a whipped cream consistency.
Mix 1 8 oz package of cream cheese, 1 cup of sugar 1 Tbsp. of lime juice, and the zest of one lime.
Fold in the whipped cream into the cream cheese filling.
Leave in the freezer until firm (at least 2 hours).
Top with Walker’s Shortbread Thistle Rounds.
Garnish with a lime.
