Pecan Pie Shortbread Bars

INGREDIENTS

  • 4 eggs
  • 1 C maple syrup
  • 6 T butter, melted
  • 3/4 C sugar
  • 1/4 tsp. salt
  • 1 1/2 C pecans
  • 1 box Walkers Shortbread Gluten Free Rounds
  • 4 T butter, melted

DIRECTIONS

  1. Preheat the oven to 350°
  2. In a bowl, crush the shortbread then stir in butter
  3. Press the shortbread crust into a pie pan
  4. Meanwhile, mix the eggs, maple syrup, sugar, salt and 1/2 C crushed pecans
  5. Pour filling over the shortbread crust
  6. Top with remaining 1 C pecans
  7. Bake at 350° for 45-50 minutes or until a toothpick inserted in the center comes out clean
