Ingredients
- 12 Walker's Shortbread Rounds Cookies
- 14 ounces strawberry ice cream
- 2 cups white chocolate chip
- 1 tablespoon vegetable oil

Method

Take ice cream out of freezer and allow to melt for 5-10 minutes until a bit soft.

Scoop a large scoop into the middle of one cookie and place another cookie on top, creating a sandwich. Press down slowly, to not break the cookies.

Place the white chocolate and oil in a microwave safe container and microwave on 50% for 30 seconds. Stir. If not melted, continue to microwave in intervals of 15 seconds, being careful not to burn the chocolate.

Take each sandwich and dip half way into the chocolate.

Place dipped sandwiches on a parchment or wax paper lined baking sheet and place back in the freezer for 30 minutes before serving.

If not eating right away, wrap in parchment paper, then foil, then place in an airtight container for up to one month.
