Mashed Pea with Butter Prawns Oat Crackers

INGREDIENTS
12 Walkers Highland Oat Crackers
10 oz. Frozen Peas
3 T Low-fat Natural Yogurt
2 T Chopped Mint, plus a few extra leaves, torn
Zest & Juice 1/2 lemon
12 Large Raw Tiger Prawns
Pinch Chili Flakes
2 T Butter
Sea Salt
INSTRUCTIONS
- Bring a pan of water to a boil, and add the peas. Allow them to sit and defrost for a couple minutes, then drain.
- Put the drained peas, yougurt, chopped mint, lemon zest and juice in a bowl and mash lightly.
- Heat the butter in a frying pan, add the chili flakes and prawns and cook for 3 minutes or until turned pink and cooked. When cooked place on a paper lined with paper towls.
- When ready to serve, arrange oat crackers onto a platter and top with a spoonful of mashed peas and a prawn. Serve with extra chili flakes and salt.
