White Chocolate Lemon Pistachio Dipped Shortbread Cookies


  • 1/2 cup white chocolate
  • Zest of 1 lemon
  • 1/3 cup pistachios shelled and crushed into crumbs
  • 8 Walkers Shortbread cookies


  1. To a microwave safe bowl, add the chocolate chips. Microwave on 50% power for 30 seconds, stir and repeat until the chocolate is melted.

  2. While the chocolate is warm, dip half of a cookie in the chocolate, sprinkle with a little lemon zest and coat with the pistachio. Place on a cooling rack to set.
