Chocolate Ganache Sandwiched Shortbread

IngredientsMakes about 1 1/2 cups
6 ounces semisweet or bittersweet chocolate, finely chopped
1 cup heavy cream
Walkers Shortbread Rounds
Crushed Peppermint Candies (Optional)
DirectionsPut the chocolate in a medium bowl. In a small saucepan bring the cream to a boil, pour it over the chocolate and then let the mixture stand for 2 to 3 minutes. Stir the chocolate until it is completely melted. Let the ganache cool to room temperature, covered tightly with plastic wrap until ready to use.
Assemble: Layer one Walkers Shortbread Round with the Chocolate Ganache and top with one Walkers Shortbread Round. We rolled the cookies in the crushed Peppermint Candies to coat the sides.
