- 1 box of Walker's Shortbread Triangles (1 box makes 15 Mini Lemon Cream Pies)
- For the Chantilly Cream
- 1 Cup Heavy Whipping Cream
- 2 Tbsp Sweetener of Choice
- ½ Tsp Vanilla Extract
- Lemon Curd: any brand (or homemade) of lemon curd that's stiff enough to pipe onto the shortbread triangle (we used Stonewall Kitchen).
Make the Chantilly Cream
Whip 3 ingredients until cream forms stiff peaks, fill a piping bag with a star nozzle
Fill a piping bag (use a round nozzle or no nozzle) with lemon curd.
Pipe the Lemon Curd horizontally starting at the widest point leaving a “crust” at the top
Pipe a neat dollop of Chantilly Cream on the middle of the Lemon Curd
