Mashed Pea with Butter Prawns Oat Crackers

Paired with a salad for lunch or dinner, or great as party food. Traditionally, mashed peas (mushy peas) are made with mature marrowfat peas. While dried marrowfat peas are traditional for making mushy peas, it is just as acceptable to use frozen peas, which we have done to simplify our recipe with butter prawns featuring our oat crackers (oatcakes). Oatcakes are similar to flatbread or biscuit.

  • 12 Walkers Highland Oat Crackers
  • 10 oz. Frozen Peas
  • 3 T Low-fat Natural Yogurt
  • 2 T Chopped Mint, plus a few extra leaves, torn
  • Zest & Juice 1/2 lemon
  • 12 Large Raw Tiger Prawns
  • Pinch Chili Flakes
  • 2 T Butter
  • Sea Salt
Mashed Pea with Butter Prawns Oat Crackers


Bring a pan of water to a boil, and add the peas. Allow them to sit and defrost for a couple minutes, then drain.
Put the drained peas, yougurt, chopped mint, lemon zest and juice in a bowl and mash lightly.
Heat the butter in a frying pan, add the chili flakes and prawns and cook for 3 minutes or until turned pink and cooked. When cooked place on a paper lined with paper towls.
When ready to serve, arrange oat crackers onto a platter and top with a spoonful of mashed peas and a prawn. Serve with extra chili flakes and salt.
